Gluten Free, Dairy Free & Sugar Free Pancakes

Preparation Time: 30 minutes  /   Makes +-10 small pancakes

Ingredients: 

4 ripe Bananas

4 free-range eggs (Mooberry Farms)

3 tbs Cassava Flour

Organic Cold-pressed Coconut oil for frying (by Crede Natural Oils)

Berries, granola, Nut butter for garnish

Preparation:

Mix the eggs and bananas in a blender. Add Cassava flour and blend again.

Lightly oil a frying pan and pour the dough with a large spoon into small size pancakes (+-8 cm diameter).

Cook for 1-2 minute and turn the other side.

Stuck 3-4 pancakes and arrange with fresh berries, kiwi, nut butter, granola, yogurt or drizzle with Coconut Blossom Syrup.
