Betalains are naturally occurring red-violet and yellow plant pigments found in a relatively small group of plants, including beetroot, Swiss chard and certain cactus fruits. In beetroot, the best-known red-violet pigment is called betanin.
Interestingly, betalain pigments are so powerful that they can temporarily colour urine or stools pink or red after eating beetroot. This harmless phenomenon is known as beeturia.
And there is another fascinating connection: beetroot and Swiss chard are actually varieties of the same species, Beta vulgaris. Over generations, people selectively cultivated one primarily for its enlarged root and the other for its leafy stems and leaves.
