Ingredients: Rice flour, potato flour, tapioca flour, chickpea flour, flaxseed flour, xantham gum
Directions to use: Can be used to thicken sauces, soups and stews. Also ideal for use in cooking and baking. Xanthan gum acts as a binding agent. A raising agent should still be used in baking.
RECIPE: Apple & Pecan Muffins
Ingredients
- 2 Granny Smith Apples
- 2 tsp lemon juice
- 160 g Organic Brown Sugar
- 2 cups Gluten Free Flour Mix
- 3 tbsp Flaxseed Powder
- 4 tsp baking powder
- 1 tbsp mixed spice (ground)
- ½ tsp salt
- 80 g Pecans, chopped
- 250 ml milk
- 1 egg, beaten
- 4 tbsp oil
Method:
- Peel, core and finely chop the apples. Add the lemon juice and 4 tbsp of the sugar and leave for 5 minutes.
- Sift the dry ingredients together. Make a well in the centre.
- Beat the wet ingredients together and add the apple and pecans. Tip the mixture into the well and mix into a lumpy batter.
- Bake for 25 – 30 minutes at 200°C until golden.
Makes 12 muffins.
