Brinjals, also called aubergines or eggplants, belong to the nightshade family of vegetables and are related to tomatoes, potatoes and peppers.. This humble fruit is a rich source of dietary fibre, vitamins, minerals and antioxidants, has a low Glycemic Index and is a popular ingredient in Mediterranean and Asian cuisine. Brinjals can be roasted, baked and cooked in casseroles.
