Gem Squash is a vegetable growing on creeping vines plants, which are easy to grow. The dark green, round fruit of the plant is a rich source of dietary fibre, trace minerals such as Potassium, Iron and Phosphorus and vitamin C, A and B3. It can be boiled, roasted or baked and makes delicious savoury or sweet meals.
