This Tamari Sauce is gluten-free soy sauce. Kimono Tamari is naturally brewed up to 6 months to retain the essence of its Japanese roots. Tamari sauce is s generally thicker, less salty and with a strong flavour then soy sauce.

The difference between soy sauce and tamari sauce is in the process of making and the ingredients.
Conventional Soy sauce is made by cooking soy, wheat and other grains and then fermenting the mixture.
Tamari is the liquid by-product of making Japanese miso. It has very little or no wheat at all and it is generally thicker, less salty and with a strong flavour then soy sauce.
