Spelt is an ancient species of wheat that has been grown since 5000 BC. It  is often tolerated by those sensitive to wheat. Health Connection Wholegrain Spelt Flour is made from whole spelt kernels which have been milled to produce this brown flour with a slightly sweet, nutty flavour.

Directions to use: Spelt flour can be used as an alternative to wheat flour in cooking or baking. As this flour is low in gluten, use Xanthan Gum/ Guar Gum as a binding agent to improve the texture and volume of baked goods.
