Polenta is a coarsely milled yellow maize meal. It originates in Italy, where it’s been traditionally prepared for generations. Polenta is naturally gluten-free, with versatile cooking applications. This yellow maize meal can be boiled with a bit of butter and touch of salt, or baked or added to gluten-free recipes. It makes delicious sweet or savoury porridge, or used as base ingredient in gluten-free bread, side dish for meat, fish and eggs and even added to salads and stir-fries.

Directions to use: In a pot, bring 3-4 cups of water to boil. Slowly add 1 cup polenta and whisk/stir continuously. Reduce hest and simmer for 5-10 minutes while stirring until the polenta pulls away from the sides of the pot. Serve with sweet or savoury dishes for breakfast, lunch or dinner.
