Health Connection Wholefoods Gluten-Free Brown Flour Mix is a convenient general purpose flour blend, which can be used as a substitute for wheat flour in cooking or baking. This convenient flour mix provides a pleasant nutty flavour to freshly baked bread, pizza base, muffins, cookies etc. The flaxseed powder adds fibre which is often deficient in a gluten free diet.

Directions to use:  Can be used to thicken sauces, soups and stews.  Also ideal for use in cooking and baking.  Xanthan gum acts as a binding agent. A raising agent should still be used in baking.

RECIPE: Apple & Pecan Muffins
Ingredients:

  • 2 Granny Smith Apples
  • 2 tsp lemon juice
  • 160 g Organic Brown Sugar
  • 2 cups Gluten Free Brown Flour Mix
  • 3 tbsp Flaxseed Powder
  • 4 tsp baking powder
  • 1 tbsp mixed spice (ground)
  • ½ tsp salt
  • 80 g Pecans, chopped
  • 250 ml milk
  • 1 egg, beaten
  • 4 tbsp oil

Method:

  • Peel, core and finely chop the apples. Add the lemon juice and 4 tbsp of the sugar and leave for 5 minutes.
  • Sift the dry ingredients together. Make a well in the centre.
  • Beat the wet ingredients together and add the apple and pecans. Tip the mixture into the well and mix into a lumpy batter.
  • Bake for 25 – 30 minutes at 200°C until golden.

Makes 12 muffins.
