Quinoa is by its nature gluten-free, high in energy and a source of complete protein. This grain-like crop has a light, fluffy texture and a mild, slightly nutty flavour when cooked. Quinoa can be used as an alternative to rice or couscous.

Ingredients: red quinoa

Directions to use: Bring 1/2 cup of quinoa to the boil with 1 cup of water / stock. Cover and simmer for 15-20 minutes. Serves 4.
