Millet is a small grain from the grass family Poacea. It is is naturally gluten free cereal, much more affordable than quinoa and often used in flat-bread recipes. This tiny grain is a stable food in many countries in Northern Africa, Eastern Europe and Middle East. It cooks similar to rice and quinoa and can be eaten as porridge, both sweet or savoury, or added to stews and soups, or served as a side dish with grilled meat, fish or vegetable meals.

Directions to use: Cook millet by simmering with 2 to 3 cups of water per cup of millet. Can be eaten as a porridge either sweet or savoury. Millet can also be added to stews or soups.
